Caesar Salad Dressing

2 tablespoons almonds

3 cloves garlic, minced

2 tablespoons Dijon mustard

3 tablespoons nutritional yeast

2 tablespoons soy sauce

3 tablespoons fresh lemon juice Or 1 ½ tablespoons of fresh lemon juice and 1 ½ tablespoons of fresh squeezed ginger.

¼ cup water

1 tablespoon olive oil

Other Ingredients

Italian Herbs

Non-stick olive oil spray

White or Whole Wheat Sourdough Bread

Romaine Lettuce

Combine all ingredients in a food processor and blend. For delicious home made croutons get a loaf of fresh white or whole-wheat sourdough bread. Cut the bread into cubes. On the stove heat a skillet or pan on medium to low heat. You do not want the pan to be so hot that it makes the oil smoke. If you have a non-stick spray this works well to keep the bread from sticking to the pan. Use a good olive oil and cover the pan well. Then fry the croutons in the olive oil until crispy. Add Italian herbs if desired. You can also heat the croutons in the oven at 350 degrees if you desire a crispier crouton.

Once you have washed, cut, and dried your romaine lettuce you can toss the dressing and croutons into it. If you are planning on saving the salad to eat for many days I recommend you keep everything separate containers until you are ready to eat so the salad does not get soggy. This is a very quick and easy salad to make and when it is finished it will amaze all of your friends. It should not take you more than 20-30 minutes at the most. This recipe will make enough salad for 5- 8 servings. Enjoy!
